EXECUTIVE CHEF NICK YANES PREPARES ENTICING NEW WINTER MENU AT UPBEAT DOWNTOWN PORTLAND RESTAURANT

H5O bistro & bar releases seasonal menu with simple, classical and whimsical Northwest flavors

PORTLAND, Ore. – (December 13, 2010) – H5O bistro & bar,an urban contemporary restaurant located in the heart of Portland where downtown meets the river, has released its newest seasonal menu, featuring modern twists on classic dishes.

"This has been a fun menu to plan," said Executive Chef Nick Yanes. "We're using traditional, seasonal ingredients like squash, huckleberries, rice pudding and chestnuts, and creating new and exciting dishes."

Executive Chef Nick Yanes prepares the freshest and highest quality ingredients using innovative techniques and plating presentations. Included on the winter menu are expertly prepared dishes such as Salmon and Hamachi Poke with pickled huckleberries, cilantro, crispy fennel and orange vinaigrette; Butternut Squash Tater Tots with sage, lemon and brown butter aioli; Sous-Vide of Thundering Hills Beef Tenderloin with crushed fingerling potatoes, soffrito, tomato emulsion and mojo verde; Seared Saddle of Venison with rice pudding, salty caramel apples, curried carrots and cilantro; H5O "Candy Bar" with crispy chocolate, chocolate brownie, chocolate ganache, orange mousse and candied pistachios; and Warm Italian Chestnut Pie with nitro whipped eggnog ice cream, bourbon gelee, white chocolate ornament and warm spice caramel.
