ALTITUDE RESTAURANT OPENS AT THE RESORT AT THE MOUNTAIN

Local Cuisine Reaches its Peak at Oregon’s Mt. Hood


WELCHES (MT. HOOD), ORE. - August 12, 2008 – Altitude Restaurant, under Executive Chef Paul M. Bosch, recently opened on Friday, July 18, 2008 in the newly renovated The Resort at The Mountain, located in the foothills of Mt. Hood, less than an hour from Portland, Ore. The restaurant is part of The Resort at The Mountain’s $17 million total makeover.

Chef Bosch brings nearly a decade of culinary experience to Altitude Restaurant. He attended and earned a degree in Culinary Arts from the Culinary Institute of America in New York. Bosch has held memberships with the National Sommelier Society, the Alpha Zeta agricultural fraternity, and the Golden Key National Honors Society.

The menu at Altitude Restaurant reinvents traditional items, making them new and fresh with a focus on flavors and textures. Bosch incorporates the culinary trend of 'molecular gastronomy,' which has been heralded as one of the most exciting developments in haute cuisine today. Bosch’s culinary team specializes in re-texturing "ordinary" foods to make them truly extraordinary, and using avant-garde preparation techniques to create foams, gelées, and frozen vinaigrettes. Added touches include fruit puree lollipops and granités. Menu items are prepared using the very best products and ingredients – many of which are locally and/or organically grown. Bosch takes great pride in the restaurant's extensive use of local Oregonian bounty. Literally taken from The Resort's backyard are some of the "best you can get" produce such as mushrooms, huckleberries, stone fruits (including peaches, cherries, apples), and hazelnuts. Fresh fish include steelhead, coho and sturgeon from the Columbia River, and Altitude's country-natural beef comes from nearby Sisters, Ore. To compliment any meal, Altitude's wine list features as many as 100 wines including varietals from the Willamette Valley and regions around the world. Bosch also oversees Mallard’s Café & Pub at The Resort, as well as banquets and catering in The Resort’s newly renovated 18,000 square feet of event space./p>

Menu items include starters such as Buffalo Carpaccio and Tie Dye Sushi; main courses include Grilled Kurobuta Pork Chop, Roasted Wild Salmon and Buffalo Short Rib. Dinner entrees range from $19-$37, with dinner starters from $9-$21, and desserts at $8. The Altitude lounge showcases smaller portions of the menu items.

Altitude Restaurant offers a contemporary Northwest ambience with a fresh and elegant vibe. Its sophisticated image was designed to reflect the presentation style of Chef Bosch. The updated look integrates views of the beautiful outdoor setting and uses the varying textures of stone walls, wood and tile to create upscale qualities. Clean lines, spot lighting and a grand chandelier add classy touches. Coastal Hotel Group worked with Gibb Fischer of MNID & Associates of Seattle to design the interior spaces of the rooms and public spaces. "The elegant simplicity of the interiors was inspired by the resort’s classic mountain setting and Chef Bosch’s redefined Northwest cuisine, keeping in mind the total dining experience of sensory balance," said Fischer.
